Instead of only focusing on speed, they help make the brew more predictable. The #2 is the slower regulator in the set. The #4 sits in the middle. Neither is slow in the traditional sense. They do not slow the brew by clogging or restricting the coffee bed. Instead, they regulate the exit flow of the brewer, helping create a minimum contact time while still allowing air and water to move freely. This is useful across different types of coffee. Highly processed and very soluble coffees can benefit from a coarser grind while still reaching a normal brew time, helping reduce excessive ferment, funk or intensity. Very light roasts can benefit from more contact time without relying on immersion. More developed roasts often taste cleaner and sweeter with a coarser grind, and the regulators help make that possible without the brew running too fast.
